Soup For the Soul

There's a quick and simple recipe for when you're really hungry and you have to eat something during this fast:

Homemade Vegetable Soup
  • 1 Onion sliced
  • 1 Raw sweet potato peeled and cut into wedges
  • 1 Medium carrot sliced or diced
  • One dozen snow peas
  • 1 Bok Choy
  • 2 cans low sodium/low fat chicken broth

Bring the chicken broth to a boil and add the bok choy; turn down to a simmer for two minutes.
Add the remaining ingredients and allow to simmer for another 2 to 3 minutes.
Enjoy the soup while it's hot!
