Homemade Vegetable Soup
- 1 Onion sliced
- 1 Raw sweet potato peeled and cut into wedges
- 1 Medium carrot sliced or diced
- One dozen snow peas
- 1 Bok Choy
- 2 cans low sodium/low fat chicken broth
Bring the chicken broth to a boil and add the bok choy; turn down to a simmer for two minutes.
Add the remaining ingredients and allow to simmer for another 2 to 3 minutes.
Enjoy the soup while it's hot!
